Taleggio

   Taleggio is an uncooked soft cow’s milk cheese from Lombardia.  Traditionally it is formed in a five pound squared that is about two inches thick.  The rind is brine washed (salt and water) and is a natural pink with some microflora bloom.  The cheese needs to age a minimum of 35 days.  When the cheese is young it tends to be tart and salty.  As the cheese ages it develops flavors of mushrooms and red meat.  A great cheese to enjoy with fuller Italian red wines.
